Hand harvested Sauvignon Blanc is then wild fermented - some in French Oak, some in tank. Sitting on lees for four months creates depth of flavour and a great mouth feel. This is complex, sophisticated Sauvignon Blanc with plenty citrus but also ripe white fruit and a savoury tang of herbs at the end.
